10 Quick and Fast Lunches for Everyone!



10 Quick Healthy Lunches

1. Chicken Salad On Standish Farms Cracked Wheat
Mix shredded chopped chicken with celery, chopped pickles, red onion, dab of Grey Poupon, Best Foods mayo, sprinkle of basil, and black pepper.
2. Quesadillas
Smear a bit of refried beans, or shredded chicken, taco meat or whatever protein you have on hand and spread on tortilla, sprinkle a bit of cheese along with a tad of salsa or taco sauce and any veggies you want, place another tortilla on top and bake at 350 or place in a fry pan on medium and flip when lightly brown.
3. Chef Salad
Place mixed salad in a bowl, sprinkle ham, turkey and chopped boiled eggs on top, followed by shredded cheddar cheese, chopped tomatoes, sunflower seeds and croutons then top with you favorite dressing like my favorite Hidden Valley Ranch:) My kids love it!
4. Grilled Ham or Turkey Cheese Sandwich
Butter 2 pieces of Sweetheart White Bread and place ham or turkey between and then slices cheese and place in hot fry pan on medium flip when brown and enjoy!
5. Erins Reuben
Butter 2 slices of rye bread and place towel dried saurkraut mixed with 1000 Island dressing on the bread then swiss cheese and a couple slices of pastrami top with other slice of bread and place in fry pan until golden brown on both sides. Yummo!!
6. Italian Pasta Salad
Mix already cooked whole grain pasta( 2 cups cooked) and add in steamed broccoli pieces, steamed asparagus pieces, halved cherry tomatoes, little diced red onion, sprinkle of parmesean shreds, shredded chicken if on hand, diced artichokes and a few black olives chopped mix with Olive Garden Dressing ( found at Sams Club) mix and enjoy!
7. Vegetable Soup
In a pan bring to simmer 3 cans beef broth or stock, 1 carrot diced, 2 potatoes diced, 1/2 can whole tomatoes squished in your hands, quarter of an onion diced, and a bit of cabbage diced serve when veggies are tender.
8. EggSalad Sandwiches
Mix 2 boiled eggs with yellow mustard, miracle whip, chopped pickles, and grated onion if you like a dab of salt and ground pepper and serve between some Sweetheart White Bread or Natures Pride Bread made with no perservative or artificial ingredients and whole grains. So good:)
9. Caesar Sandwich Wraps/or Sandwich Wraps
Mix romaine lettuce, shredded chicken, chopped cucumbers, tomatoes, and parmesean grated with Litehouse Caesar dressing mix well and serve in a tortilla(DON JULIOS are the softest and I buy them at the Sweetheart thrift store) Can also make any sandwich into a wrap and add in lettuce and veggies to make a healthy sandwich option.
10. English Muffin Pizza
Split english muffins(love Millbrook, gets crispy instead of soggy in process) in half, toast in toaster for a couple seconds to dry out bread a bit, then smear with prego or any other marinara, top with shredded cheese, pepperoni, sausage, onions, green peppers, and or olives, then bake in a oven at 375 for 10 minutes or until cheese melts .. super fun and kids can make them to their liking!!
